Ayam Balado (Chillies Fried Chicken)

Ayam Balado, a tantalizing Indonesian dish, features succulent fried chicken smothered in a vibrant and spicy chili paste. The chicken is cooked to perfection and then generously coated with a bold mixture of red chilies, shallots, garlic, and tomatoes, creating a mouthwatering blend of heat and tanginess that elevates this dish to a culinary masterpiece.
Ingredients
Main Ingredients
- 1 chicken
- 100 g rice flours
- 1 tablespoon white pepper
- 1 teaspoon garlic powder
Chilies ingredients
- 500 g chilies
- 5 shallots
- 5 cloves of garlic
- 1 teaspoon of white pepper
- 1 teaspoon of coriander
- 1 tablespoon of tamarin
- 2 teaspoon of salt
- 2 tablespoon of sugar
- Some waters
- Oil for deep fried
- 1 Lime
- 3 leaves of lime leaves
Steps
- Cut the whole chickens into pieces
- In a large bowl, combine rice flour, salt, pepper, garlic powder into thoroughly mixed
- Place the chicken pieces into the bowl of mixed flour until they are coated evenly
- Heat oil in a wok, and deep fry the chicken on high heat, until they turn golden.
- Keep the leftover oil enough to saute the chilies later.
- Grind chilies and the rest of spices, (note: don't need to grind them to a paste).
- Saute the chilies together with leftover oil.
- Give a dash of the squeezed lime juice.
- Place the fried chicken on a plate, and pour the chilies on top.
