Soto Kudus (Kudus Chicken Clear Soup)

Soto Kudus is a distinctive Indonesian soup originating from Kudus, Central Java, known for its aromatic broth. Typically made with shredded chicken and a blend of local spices, it offers a rich and savoury flavour. Served with rice, vermicelli, and various toppings such as hard-boiled eggs and fried shallots, Soto Kudus is a flavorful representation of regional Indonesian culinary traditions.


Ingredients
  • An half free-range chicken
  • 5 kaffir lime
  • 3 bay leaves
  • 2 cm ginger, finely sliced
  • 1 cm turmeric, finely sliced
  • 3 tbsp vegetable oil
  • 2 liter water

Spice Paste (ground this ingredients)

  • 5 cloves garlic, minced
  • 8 cloves shallot, minced
  • 5 candlenuts
  • ½ teaspoon ground pepper
  • dash of salt
  • dash of sugar

Condiments

  • Tomatoes, sliced or diced
  • Vermicelli 
  • Fried shallots
  • Spring Onion, chopped
  • Lime wedges
  • bean sprouts, blanched
  • eggs, boiled, halved
  • Coriander leaves

Optional Condiments

  • Fresh Chillies (sliced)
  • Sweet Soy Sauce
  • Garlic cracker

Steps
  1. Making chicken stock, boil chicken until half-done.
  2. While boiling chicken, saute spice paste, add kaffir lime leaves, bay leaves, ginger, and turmeric until fragrant.
  3. Add into chicken stock, stir to mix well.
  4. Cook until all ingredients mixed well evenly with chicken.

Serving

  1. On serving bowl arrange bean sprouts and vermicelli.
  2. Pour Soto / soup into a bowl.
  3. Shred chicken, and put them on the soup
  4. Add or decorate the condiments ingredients on top of the soup
  5. May add optional condiments based on preferences
