Gado Gado (Medley Salad with Peanut Sauce)

Gado Gado is a national Indonesian salad that is slightly boiled, blanched or steamed vegetables and combine with boiled egg, boiled potato, fried tofu, and sometimes eaten with lontong (rice wrapped in banana leaf) served with a peanut sauce dressing.


Ingredients

Peanut Sauce:

  • 300 gr peanuts, peel and fry until light brown, finely ground (or use peanut butter)
  • 3 bird chilies, ground
  • 1 tbsp shrimp paste
  • 3 tbsp palm sugar, shaved
  • 3 cloves garlic, ground
  • 5 cloves shallots, ground
  • 500 ml of water
  • 5 kaffir limes
  • salt to taste

Salad:

  • 5 medium potatoes, diced or sliced
  • 5 eggs, boiled
  • 100 gr Chinese cabbage
  • 100 gr bean sprouts, roots trimmed, blanched
  • 100 gr tofu, fried and diced
  • 1 bunch snake beans, coarsely, chopped, blanched
  • 100 gr carrots, sliced thinly  

Condiments:

  • Prawn or garlic or tapioca crackers
  • Fried Shallots
  • Sweet Soy Sauce (optional)

Steps

Peanut Sauce:

  1. Preheat oil of saucepan, add kaffir limes, garlic, shallots, chilies, and shrimp paste, stir until fragrant.
  2. Add grounded peanut (or peanut butter) into the saucepan, stir until fragrant.
  3. Add water slowly and stir until diluting all ingredients.
  4. Add palm sugar, and stir until simmer
  5. Add salt to taste

Prepare Salad

  1. Prepare a salad bowl or plates, and arrange all salad ingredients
  2. Pour several spoons of peanut sauce on top of arranged salad
  3. Put condiments on top of salad
