Beef Ribs with Red Black Pepper Wishkey BBQ Sauce

Ingredients
Ribs
- 1/2 rack spare ribs
- 1 teaspoon sea salt
- 1 teaspoon cayenne pepper
- 5 cloves garlic
- Onion
BBQ Sauce Ingredients
- 1/2 cup Jack Daniel's Tennessee Whiskey
- 3 cloves garlic finely chopped
- 1/2 cup onion finely chopped
- 2 cups ketchup
- 1/3 cup apple vinegar
- 1/2 cup brown sugar
- 3 tablespoon Worcestershire sauce
- 1 teaspoon Liquid Smoke
- 1 teaspoon freshly ground pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon sea salt
Steps
BBQ Sauce
- In medium sized heavy sauce pan combine, onion and garlic. Saute until onions are translucent (about 5 minutes).
- In separate bowl combine all other ingredients.
- Add to saucepan, bring to slow boil, then reduce heat and simmer on low heat uncovered for 15-20 minutes.
- Add 1/2 cup Jack Daniel's and boil for another 5 minutes
BBQ Ribs
- Mix the salt, pepper and cayenne pepper in a small bowl to make a spice rub.
- Sprinkle both sides of the ribs with the rub.
- Cut Onion and put inside the pressure cooker pot
- Stack the ribs in the pressure cooker bone side down
- Pour water into the pressure cooker pot until covering the BBQ Ribs
- Lock the pressure cooker lid and cook for 20 - 25 minutes, turn off the fire and let the pressure cooker come down around 15 minutes
- Preheat the oven 200 degree celcius
- Put the ribs side down on a tray, brush the ribs with BBQ Sauce and put into the oven for around 5 minutes for each side
