Empal Daging (Spiced Fried Beef)

Spicy fried beef or Empal in Indonesia originated from the Sundanese cuisine of West Java, Indonesia, where thinly sliced beef is marinated and then fried to perfection. The marinade, rich with soy sauce, tamarind, garlic, and coriander, imparts a sweet and savoury taste.
Ingredients
- 1 kg carousel beef, diced or sliced
- 10 kaffir lime leaves
- 5 bay leaves
- 1 liter coconut milk
- 2 tbsp cayenne pepper
- 8 cloves shallot, minced
- 8 cloves garlic, minced
- 4 cm of galangal, minced
- 4 cm of ginger, minced
- 1 bunch of lemongrass, smashed
Steps
- Preheat slow-cook pot and add oil into it.
- Add shallot, garlic, galangal, and ginger paste, stir until fragrant.
- Add kaffir lime and bay leaves, and also lemongrass, stir again around 2 minute.
- Add diced or sliced beef into the pot and stir until they are changed the colors.
- Pour coconut milk turn up the heat and cook until stock is fully reduced or a little bit dry and meats turn brown.
- Preheat the pan and oil for deep fried.
- Add the meats into the hot oil and deep fried for around 2 - 3 minutes.
- step aside meats and put them on the paper towels to absorb excess oil.
