Ayam Goreng Kecap Inggris (Worcestershire Fried Chicken)

Ayam Goreng Kecap Inggris, or Worcestershire Fried Chicken, is a fusion delight that infuses Indonesian and British flavors. Succulent fried chicken is bathed in a savory marinade featuring Worcestershire sauce, garlic, and soy, creating a unique blend of international tastes. Ingredients
  • 1 whole free-range chicken, cut into 8 - 10 pieces
  • 1 lime
  • ½ cup of rice flour
  • ½ cup corn lour
  • 1 tsp coriander
  • 1 tsp white pepper
  • 1 tsp cayenne pepper
  • Salt to taste
  • Oil for deep-frying

Sauce

  • 2 tbsp butter
  • 3 cloves garlic, minced
  • ½ onion, diced
  • 1/2 cup tomato ketchup
  • 4 tbsp sweet soy sauce (Kecap Manis)
  • 4 tbsp Worcestershire sauce
  • 3 tbsp white wine
  • 50 ml of water
  • Sesame oil

Steps

Fried Chicken

  1. In a large bowl, season the chicken with salt and pepper, squeeze lime, and set aside for 10 to 20 minutes.
  2. In a separate bowl, combine corn and rice flour, coriander, white and cayenne pepper until thoroughly mixed.
  3. Dust chicken into flour mixture until all chicken thoroughly coated.
  4. Preheat the oil to 350˚F/180˚C in a wok or deep fryer. Deep-fry chicken in batches until golden brown in color. (6 to 10 minutes, depending on the size of the chicken) Drain the chicken on paper towels.

Sauce

  1. Add butter in a heated pan, mix in the minced garlic and diced onions, and stir until fragrant.
  2. Then add in tomato ketchup, Worcestershire, sweet soy sauce, and white wine and stir around 2 minutes and add water
  3. Stir and simmer the sauce mixture for about 7 minutes. Do keep the heat low to prevent the sauce from burning.
  4. When the chicken is done, reheat the sauce and coat the chicken.
  5. Dash some sesame oil over the top and serve immediately.
